From Farm to Table: Our Farming Philosophy at Chefs Dalat

The childhood of those born in Dalat is deeply intertwined with small backyard gardens – where plants grew freely under the sun and wind, breathing the fresh highland air and flourishing to the sound of birds in the trees. When we founded Chefs Dalat, we carried a simple yet profound desire: to preserve such a peaceful green sanctuary in the heart of the city. We want every vegetable and fruit served at your table to carry the pure, natural sweetness that we have always cherished.

For us, the Farm-to-Table journey is a return to the most authentic values, allowing our guests to feel the peaceful flow and the original fragrance of the Dalat we so tenderly nurture.

Located just 2.5km from Dalat Market, the Chefs Dalat garden is a 3,000m² verdant sanctuary tucked away amidst a city that is increasingly dominated by greenhouses. This is a piece of land with a long, clean history – one we feel fortunate to inherit and cherish as a precious gift from nature.

Here, we choose the most natural way to garden, just as our grandparents did: no high-intensity lights, no plastic covers. Our vegetables grow under the open sky, drinking the morning dew and befriending birds and butterflies, choosing their own perfect moment to blossom and bear fruit. Perhaps that is why our produce isn’t glossy or perfect in the conventional sense, they often bear tiny scars from the wind or traces of small garden visitors. But we deeply love this rustic appearance – a vibrant imperfection that holds the rich, honest sweetness we always strive to bring to your plate.

The Ancient Well

The ancient well – the heart of the garden

Our Farm-to-Table story originates not only from clean soil free of chemicals and urban dust but also from a “lifeline” that has been rooted here for nearly a century: the neighborhood’s ancient well.

In years past, local residents would come here to carry water back home. That sweet, cool water nourished generations – from warm family meals to clothes scented with sunlight on the porch. Though many things have changed over the decades, the well remains, quiet and abundant, serving as the rhythmic heart of our garden.

Every day, the greens at Chefs Dalat are bathed in that same pure water. They grow in deep connection with nature and the subterranean pulse of Mother Earth, absorbing and radiating a gentle sweetness that eventually finds its way to your table.

Nurturing the Soil for Pure Harvests

Instead of relying on machinery or chemicals, our garden is tended by diligent and patient hands. Every day, Ms. Hòa meticulously tends to each bed of soil, hand-pulling weeds and carefully removing garden pests.

Instead of chemical pesticides, we utilize biological infusions made from ginger, garlic, and chili – familiar ingredients from our own kitchen – to protect our crops in the gentlest way possible. 

We firmly say no to toxic chemicals, focusing instead on nourishing the earth with natural organic compost. As the saying goes, “Birds settle on fertile land” – our garden is now a vibrant habitat for birds and bees. These vital helpers not only aid in pollination but also participate in the natural cycle of pest control, maintaining the garden’s inherent balance. Seasonality

In the Chefs Dalat garden, nearly 60 varieties of vegetables and fruits are intercropped and rotated according to the seasons. Each seed is given the time it needs to choose its own best moment to flourish without any forced intervention. To us, eating seasonally is the ultimate way to savor the essence of the earth and to harmonize ourselves with the natural flow of life.

Nothing can replace the primal sweetness of produce harvested at its peak. This experience goes beyond mere taste at the dinner table, it is an understanding of the values this land represents: a way of living and eating where we learn to appreciate what nature generously bestows upon our local region, rather than simply seeking food based on personal whim. This is what we call “Seasonality.”
